Our IQF scallops are sourced from a variety of boats and off-loading facilities on the Atlantic Coast as well as from partners around the world. All scallops are hand graded for uniformity of size and minimal pieces prior to entering our state-of-the-art, flighted IQF Tunnel. The scallops are frozen at an average temperature of 150-165 below Fahrenheit in 4-5 minutes to lock in freshness. Product is then weighed and bagged in our fully automated packaging system. COOL labeling, size, and lot numbers are jet printed on the bags for traceability. All product goes through metal detection as a final HACCP step.
