ABOUT CHEF GIULIO

Born and raised on the Italian peninsula of Salento, Chef Giulio trained at the "Center of Culinary Arts" in Casargo, Italy and started his culinary career as an apprentice cook with Costa Cruise line based out of Venice. From there he worked as "chef de partie" at the 4-star hotel "Principe di Piemonte" in Viareggio, Tuscany. In 1991, Chef Giulio, left Italy for the turquoise water of the South Pacific, working as a Chef for the Italian consulate in the Fiji Islands until opening a small Italian restaurant in the Vava'u archipelago of the kingdom of Tonga. It was here that he had the honor of cooking for members of the Tongan Royal Family, including the Crown Prince. From the South Pacific he moved to the French side of the island of St. Martin in the Caribbean, where he found a home as the Executive Chef at "il Nettuno" Italian restaurant, featured by Frommer's guide as one of the best restaurants on the highly competitive island.

He finally landed in Rhode Island in 2000, where he was the Executive Chef at Z Bar & grille, and later Mediterraneo in Providence. In 2015 he was the opening Executive Chef at Mare Rooftop restaurant on the East Side of Providence and has been Executive Chef at Bellini in Providence since the restaurant opened in October 2021.
